Starting the AIP Diet can be overwhelming. All the things you can’t have and all the things you can kind of have. Many of us never really cooked food before – and we definitely never cooked as much as is required by the AIP Diet. It’s a lot of cooking because you essentially can’t eat out and order food (all the food is probably cooked in either butter, or canola oil.) You also can’t just buy most prepacked food from the grocery store (additives, chemicals, not approved ingredients to make food taste delicious.) I was totally unprepared when I started on this journey but quickly got up to speed.

Here’s a list of foods and items to get you started and on your way to cooking all of the AIP Diet foods you’ve ever wanted to cook. Kitchen tools, pantry staples, and more.

No soy? No Problem. Coconut Aminos is THE soy sauce replacement. Used in making teriyaki sauce, soy ginger sauces, and many, many other recipes that will make you wonder how you never knew coconut aminos existed until now.

Since the AIP diet says no to all grains, that means you won’t be using the usual grain flours AND all of the nut flour alternatives too. So, enter cassava flour. It’s made from the cassava root, but unlike tapioca starch/flour (which is also made from the cassava root) – cassava flour is made from the ENTIRE root.

I don’t trust teflon/nonstick cookware to not poison me. And you don’t want to use more cooking oil that you need. Enter non-stick ceramic cookware. If you’ve never used ceramic pans before – the nonstick is impressive, and you don’t need to use nearly as much oil.

There are actually very few brands that are 100% coconut milk (and water). Most of them have an additive such as guar gum, or a sulfite preservative, or… more. Even many of the organic brands still include thickeners. But if you’re serious about doing the AIP Diet elimination phase, you’ll want to find coconut milk that is only coconut, and water. You’ll be roasting a lot of vegetables and food in the oven. Get yourself a large baking pan with a rack to let the air circulate underneath your food. Less soggy. More better.
