Starting the AIP Diet can be overwhelming. All the things you can’t have and all the things you can kind of have. Many of us never really cooked food before – and we definitely never cooked as much as is required by the AIP Diet. It’s a lot of cooking because you essentially can’t eat out and order food (all the food is probably cooked in either butter, or canola oil.) You also can’t just buy most prepacked food from the grocery store (additives, chemicals, not approved ingredients to make food taste delicious.) I was totally unprepared when I started on this journey but quickly got up to speed.
Here’s a list of foods and items to get you started and on your way to cooking all of the AIP Diet foods you’ve ever wanted to cook. Kitchen tools, pantry staples, and more.
Coconut Secret Coconut Aminos
No soy? No Problem. Coconut Aminos is THE soy sauce replacement. Used in making teriyaki sauce, soy ginger sauces, and many, many other recipes that will make you wonder how you never knew coconut aminos existed until now.
Since the AIP diet says no to all grains, that means you won’t be using the usual grain flours AND all of the nut flour alternatives too. So, enter cassava flour. It’s made from the cassava root, but unlike tapioca starch/flour (which is also made from the cassava root) – cassava flour is made from the ENTIRE root.

You’ll be doing a lot of cooking with the AIP Diet. Like ALL THE COOKING of ALL THE FOODS. So you’ll need a versatile pan that can go from the stove top, straight into the oven. A cast iron skillet is perfect for this and a valuable tool in your kitchen arsenal.
No seed oils, no vegetable oils, and no grain oils. Coconut oil has a high smoking temp., and it’s so useful in many recipes that you’ll be making on the AIP diet. Always have this on hand.
You’ll be cutting and chopping a lot of vegetables and some meats – a sharp chef’s knife is a must have. This Mercer 8 inch chef’s knife is ridiculously sharp, and definitely affordable. Don’t waste your time with dull knives. It’s not fun, and it’s dangerous.
I don’t trust teflon/nonstick cookware to not poison me. And you don’t want to use more cooking oil that you need. Enter non-stick ceramic cookware. If you’ve never used ceramic pans before – the nonstick is impressive, and you don’t need to use nearly as much oil.
Each alternative flour has different properties. Cassava flour SUCKS UP Liquid, and Coconut Flour… doesn’t as much. You’ll find that different flours are better for different tasks. Stock up on coconut flour.
Having a good cutting board paired with a good chef’s knife is like… 68% of feeling like a good chef. So get a large wooden cutting board and start chopping everything (except your fingers.)
One of the main benefits of the AIP diet is that it’s an ultimate anti-inflammatory food plan. Turmeric is one of the ultimate anti-inflammatory foods and if you haven’t already, you’ll definitely want to start cooking with it.
Since you’ll be cooking on ceramic non-stick cookware, you won’t want to use metal cooking utensils that could damage the ceramic coating. Switch to wooden utensils and get that natural feeling all over. Or at least you won’t be scraping the coating off your non-stick pans.
Not all salt is equal and you need to upgrade and stop using that rainy girl iodized salt. Throw it out. This stuff is the perfect size with the crystals not too big and not too small. And it taste good. A staple in your salt collection which you will now have because you will realize that there is a world of different salts, and a world of different tastes.
There are actually very few brands that are 100% coconut milk (and water). Most of them have an additive such as guar gum, or a sulfite preservative, or… more. Even many of the organic brands still include thickeners. But if you’re serious about doing the AIP Diet elimination phase, you’ll want to find coconut milk that is only coconut, and water. Aroy-D is one of the brands that fits the bill.
Not hating on European olive oils – but this stuff is GOOD and it’s made right here in the U.S. so there’s none of that fake olive scandal going on. Just good, delicious, California olive oil.
You’ll be roasting a lot of vegetables and food in the oven. Get yourself a large baking pan with a rack to let the air circulate underneath your food. Less soggy. More better.
You’re going to be doing a lot of cooking on the AIP Diet. Which also means you’ll be doing a lot of eating. Fancy eating. So you’ll need proper fancy flatware to eat from. What’s fancier than eating from a cake platter? NOTHING. Get yourself a fancy cake platter and bring the food closer to YOUR MOUTH.
